Buckeye Cookies

    . An old friend, I guess 35 years constitutes an old friend any way you look at it, recently asked for this recipe.  Kay hadn't made these for about 25 years so Judy has a good memory. Me? Not even close..

          Cookie
1  1lb. box      confectioners sugar
3 c                  Rice Krispies
2 c                  peanut butter (smooth)
1 stick (1/2c)   butter, softened

                   Coating
1 6oz. pkg.   chocolate bits
1/3 stick paraffin wax

    Combine cookie mixture in a large bowl. Using your hands roll into balls the size you want. (I remember buckeyes as about an inch across).  Place each ball on a sheet of wax paper on a jelly roll pan and place in the refrigerator to chill (and to make the toothpick stay in.)

    While the balls are chilling melt together the coating in a double boiler.

    When the balls are chilled place a toothpick in and dip each ball about 2/3 to 3/4 into the chocolate mixture and place on wax paper, remove the toothpick and let dry.  Use the same toothpick repeatedly.
