Caramel Glazed Apple Cake

1  c      light brown sugar, packed
1  c      white sugar
1 1/2 c   salad oil --- Canola
3          eggs
3  c      all-purpose flour
1  t      baking soda
2  t      cinnamon
1/2  t    nutmeg
1/2  t    salt
5         Washington, Granny Smith or Golden Delicious Apples
            cored, peeled and cut into 1/2 inch pieces
1 1/4 c  pecans or walnuts, chopped
2 1/4 t vanilla extract

Glaze
4  T   butter
1/4  c  white sugar
1/4   c light brown sugar
       pinch of salt
1/2  c  heavy cream

   Preheat oven to 350 and flour a 9x13 pan

             Combine flour, soda, cinnamon, nutmeg and salt and set aside.
    Beat both sugars and oil in a mixing bowl until well blended. Add eggs, one at a time, beating well after each egg
A   While mixer is blending the batter, sift the dry ingredients and then slowly add them  to the batter  until just blended.  Stir in apples, walnuts and vanilla.
                                                                                                (I add the vanilla to the batter while  mixer is going and then stir the apples and nuts by hand)

Pour into pan and bake at 350 50 to 70 minutes, or until a toothpick comes out clean from the center.
  Let cool in the pan while preparing the glaze.
    For the glaze, melt butter in a sauce pan ofer low heat. Add both sugars and salt and cook at med/high for two minutes.
Add cream and boil for two minutes, stiring constantly.

      Poke holes in the cake with skewers or toothpic.  Pour glaze over the cake. 
       Serve warm or at room temp.  Top with whipped cream or ice cream.
