German Potato Salad

1 qt. red potatoes, boiled and sliced thin

2 stalks celery, diced

¼ lb. bacon, fried crisp and crumbled

1 lg. yellow onion, finely chopped and sautéed in butter until golden

Dressing

1 C sour cream

  1. egg, well beaten, set aside in large bowl

¼ C cider vinegar

¼ C water

1 T Butter, room temp. (bacon fat will also do and provide flavor)

1 t flour

2 t sugar

½ t salt

½ t dry mustard

1/8 t pepper

Combine potatoes, onion and bacon. Set aside.

Blend/mash together well, butter (or bacon fat) and flour. Set aside.

In a small pan, combine water, vinegar, sugar, salt, pepper, mustard and butter/flour mixture and bring to a boil. Pour boiling mixture over egg and mix well.

Add sour cream and mix well.
