Chicken Saltimbocca

4 chicken breasts, fresh, boneless, skinless

4 slices ham, thinly sliced

4 slices mozzarella cheese

1 med. tomato, diced

½ t sage

½ c bread crumbs (Italian)

3 T parmesan cheese, freshly grated

2 T parsley (dry is OK freshly chopped is better)

4 T butter

Combine bread crumbs, parmesan cheese and parsley and set aside on a large plate.

Pound chicken breasts out until they are about 5 x 5 inches. (I do it between pieces of plastic wrap)

Preheat oven to 350º

Place a piece of ham and cheese on each breast. Add some tomato and sage.

Roll up chicken (like a jelly roll) making sure to tuck in the sides as you go.

Dip each roll in the butter and then roll in the bread crumbs.

Place on a pan and bake for 40 to 45 minutes. Or until chicken is done through.
