Chili Rice
Les and Kim Spears
1 C rice
1 small onion diced
2 T butter
1 can whole ortega chilies - rinsed
and sliced down one side.
Jack cheese - sliced
2 cans beef consommé
Brown first 3 ingredients in pan (just like rice-a-roni),
then place in pyrex baking dish
Stuff chilies with jack cheese - cut into bite size pieces and
place on top of rice.
Pour beef consommé over all and bake @375 for 45 min.
We usually double this recipe and it is just as good as a
leftover in the micro.
