Oatmeal  Cookies

1 C butter (at room temperature)
1 tsp. soda
¼ C sugar
3 ½ C quick oatmeal
¾ C light brown sugar
1 C chopped dates or raisins
1 (3 oz.) pkg. Inst. vanilla pudding
2 eggs
1 ¼ C flour
1C chopped nuts (we use walnuts)

Beat together butter, both sugars and pudding. Add eggs and beat until smooth. In a separate bowl mix together flour and soda, then add to mixture.

Stir in oatmeal, raisins/dates and nuts. Batter will be stiff.

Drop a rounded teaspoon onto greased baking sheet and bake @ 375º for 10 – 12 min. Let cool for a few minutes to set then transfer to cooling tray.

  Today I made the best ever.  Used thick rolled oats, brown rice flour and a quarter cup of flax seeds.
   Next week when I make them, again, I'm going to toast the oats and use diced dried apricots.
