Beat together butter, both sugars and pudding. Add eggs and beat until smooth. In a separate bowl mix together flour and soda, then add to mixture.
Stir in oatmeal, raisins/dates and nuts. Batter will be stiff.
Drop a rounded teaspoon onto greased baking
sheet and bake @ 375º for 10 – 12 min. Let cool for a few minutes to
set then transfer to cooling tray.
Today I made the best ever. Used thick rolled oats, brown rice flour and a quarter cup of flax seeds.
Next week when I make them, again, I'm going to toast the oats and use diced dried apricots.
