Fried Rice

4 eggs, beaten   
4 C            cooked rice       
4 Tbsp.     Oil
1 ½ C        shredded lettuce (iceberg)       
¾ C          frozen peas
1/4 C        Carrot, slivered and diced to 1/2 inch pieces              
1 Tbsp.    Oyster sauce
1 tsp.        soy sauce
1 tsp.         salt
¼ lb.        Chinese BBQd pork, diced       
2              green onion, chopped      
In a wok,
 In 1 Tbsp. oil scramble the eggs and then set aside. (I use a pastry blender to dice them up a bit so they blend easier)

 In ½ Tbsp. oil  stir fry peas, pork, and onion for 2 minutes.  Set aside.

In 2 ½ Tbsp. of oil, stir fried rice for 10 minutes.  Stir constantly as the rice burns easily.

Add salt, oyster sauce and soy sauce to rice and mix thoroughly.  Add other ingredients, including lettuce, and mix thoroughly again.
   Depending on my mood I might add a bit more soy sauce.

I’d love to make my own Chinese BBQ Pork but until I can I just have to buy some at the store…..
