Healthier Oatmeal Cookies
When we were at Whole Foods Market, the other day,
Kay was looking at the - (Well, OK, Kay is legally blind from the MS
but we were there anyway) - flours and so on and she wondered if we
(me/I) could make oatmeal cookies with brown rice flour. Then she said
we shouldn't be using processed sugar. So, I replaced that too.
Then she thought it would be a good idea to add flax and unsalted sun
flower seeds.
These taste just like they should and we have two or
three every day.
1 C butter (at room
temperature)
1 tsp. soda
¼ C sugar, unprocessed
3 ½ C thick rolled oats (not packaged or processed
1 C chopped dates or raisins
1 (3 oz.) pkg. Inst. vanilla pudding

eggs
1 ¼ C brown rice flour
¾ C light brown sugar
1/2 C sunflower seeds, unsalted
1/4 C flax seeds
1C
chopped nuts (we use walnuts)
Beat together butter, both sugars and
pudding. Add eggs and beat until smooth. In a separate bowl mix
together flour and soda, then add to mixture.
Stir in oatmeal, seeds, raisins or dates and
nuts.
Batter will be stiff.
Drop a rounded teaspoon onto greased (or
use parchment paper) baking
sheet and bake @ 375º for 10 – 12 min. Let cool for a few minutes
to
set then transfer to cooling tray.
