Kay’s Chicken Parmesan

Kay Depew (for 2)

 

2 chicken breast halves, boneless/skinless

1/3 C Parmesan cheese, grated

1/3 C Italian bread crumbs

1 (26 oz) jar pasta sauce (we used any of the various Prego  sauces)

8 oz. Mozzarella cheese, shredded

1 C pasta (we use penne)  (or spaghetti squash)

Pre heat oven to 350º

Combine parmesan cheese and bread crumbs on a small plate. Set aside.

Pound chicken to an even thickness. Moisten in water and dredge in cheese/bread mixture*. Pat mixture onto chicken to insure they are well covered.

Place on baking sheet in oven for 20 minutes. Cover with generous amount of sauce and bake an additional 5 minutes. Spread mozzarella over sauce and bake until cheese is melted. (Carl broils the cheese to get it brown and tasty)

While chicken is baking, boil pasta according to package instructions. Drain, place back into pot and add sauce. Mix well and place on plate. Set chicken on top of the pasta.

When Kay made this dish she just used cheese and bread crumbs to cover the chicken.

I usually mix some flour with s & p and have a plate of eggs. I’ll dredge the chicken through the flour, then the eggs and then the breadcrumbs/cheese mixture.

    
NOTE: Now that we are trying to eat "better" we use spaghetti squash instead of pasta.  Better for us and more "heart friendly".
