Carl & Kay’s Lasagna

Sauce (partially stolen from Teresa)

3 links Italian sausage, hot
1 lb. Hamburger
¾ C onion, diced
1-14oz. can diced tomatoes w/juice
1 jar Prego sauce w/sausage
lg. Can sliced mushrooms
3 cloves garlic, diced
2 T parsley, fresh, diced
2 T sugar
1 T basil, dried
salt to taste


3 C ricotta cheese
¾ C Parm. Cheese, grated
2 T dried parsley
3 eggs
1 t dried basil
1 t oregano leaves
1 t salt


1 pkg. Spinach, frozen, drained
4-5 oz.,each  Monterey Jack, slices and Mozzrella
Lasagna noodles cooked according to package directions

Pre-heat oven to 350º
Brown and drain meat. Add onion, garlic and cook until soft. Add remaining ingredients and simmer about 45 minutes or until thickened.
Meanwhile, mix cheese filing and cook noodles.
combine all filling ingredients.

In a 9 x 13 dish, pour some sauce over the bottom of the dish. Layer noodles followed by cheese filling, sprinkle spinach, layer jack cheese then start, again, with sauce. Top with a little sauce followed with parmesan.

Bake @ 350 º for about 45 minutes.
