This old family recipe goes back to at least the very early 40’s. Mom would make this when we lived on the farm in Carmichael.

Pastry

1 C flour
3 T butter
3 T sugar
1 egg
1 t baking powder

Mix all ingredients quickly together w/a fork or your hands. Butter a spring-form cake pan & line it with dough over the bottom 2" high up the sides. With fingers, press it evenly all around then fill with the following filling.

Filling

1 pt. Cottage cheese
1 pt. Sour cream
1 C sugar
2 T flour
5  eggs, separated
1 t vanilla (a little more is OK)

Press cottage cheese through a sieve. Mix well with sour cream, sugar, flour and egg yolks. Add flavoring.

Beat egg whites until stiff and then fold into the cottage cheese mixture.

Pour filling into the prepared pastry and bake at 425 for 15 minutes. Then reduce heat to 350 for 45 minutes more.

   Mom said you could add well drained crushed pineapple and nutmeg.
