Lamb, Shoulder Roast
2 lb shoulder roast
salt
pepper
garlic fresh or granulated
4 or 5 rosemary sprigs

      That's about it.
  I get a 3 - 4- lb shoulder roast from Whole Foods, cut it in half and freeze half for later.....

      Rub some S, P and garlic ofer all the roast. Place it, cut side down, on a tray (I use a pyrex tray), lay some rosemary sprigs around, incert a thermometer with a cord to the outside in  the middle
 and into a 275 degree oven for about 2 hours.  Increase or decrease the temperature so it is about 175 at dinner time.
