Lemonade Dill Salmon Dinner    A developing recipe.....

Kay came up with her Seasoning (that’s posted on the web site), the sabatino saugage meal and then the rubin sabatino meal. Now she changed our salmon dinner.
We tried it and it was sooooo good.  Similar to our sauce in Panko Chicken and Panko Salmon.

Here’s our dinner

2 four to six ounce salmon filets, skinless

1 ¼ C Mayonnaise

1 12 oz. container of frozen, condensed lemonade, thawed

1 15 oz. can pear halves, chilled

1 16 oz. tub cottage cheese, (we use fat free)

1/3 C water

1 T dill

2 T capers (optional)

2 T diced pimentos (optional)

2 T diced green onions (optional)
1/8 tsp. black pepper

enough broccoli for two
 

Mix mayonnaise and 3 T of the lemonade concentrateand pepper. Taste it to see if you would like a little more lemonade (I used 5T). Pour off ½ C to another container and add dill to the remaining sauce (and the capers and pimentos or the onion), mix well and set both aside.

Wash broccoli, cut into bite size flowerets and steam for 20 minutes.

Ten minutes before broccoli is done, pour remaining lemonade and ¼ to 1/3 c of water into a pan just large enough for the salmon. Bring to a boil, add salmon, cover and simmer for ten minutes or until the flesh easily flakes apart.

While salmon is simmering, place about half of the cottage cheese in a small bowl and top with pear halves cut into fourths.

When salmon is ready, place it on a plate and add the broccoli. Drizzle some of the dill mixture over the salmon and the mixture without the dill over the broccoli.

Serve and have any remaining sauce on the table to add to the salmon or broccoli as the meal progresses.

You could also just make up the sauce and broil the salmon.

Next week when I make this I may make the salmon sauce from the reduced liquid in the pan the salmon simmered in.... just a thought.....

   I made this, again, last night and we loved it but "something" just seemed to be missing.  I only made up 3/4 cup of mayo with lemonade added to taste and that seemed better.  Also we had Kay's Asparagus instead of broccoli.  If Sears ever gets my oven fixed (it's been out for three weeks) I' going to broil the salmon and use the sauce...
         Please, if you make this up let me know how you would change it... 
                Oh, capers and pimentos didn't do anything for the taste but it looked good....
