Chile Rice

Les Spears

1 cup rice

1/2 sm onion diced

2 Tblsp butter

1-7oz. can Ortega green chiles (rinsed, seeds removed, butterflied)

Jack cheese (sliced) (enough to stuff each chili)

2 cans beef consume'

1/2 consume' can of water

In a fry pan sauté onions and rice in the butter until rice is browned. Put rice mix into 9x13" baking dish. Stuff chiles with cheese and cut into inch pieces. Place chiles w/cheese on top of rice. Pour beef consume' and water over all and bake @ 375 for 45 min. or until consume' is absorbed. Note: we usually double the recipe (just like Les said to).
