Mince Meat Cake

I’m sure I should give someone credit for this but all I have is Kay’s old recipe card.


1 lb.   Mince meat
2         Eggs - separated

2 c      flour
1 c      sugar
1 c      walnuts, chopped and toasted

1 c      raisins
½ c    butter/margarine

1 T     boiling water
1 t      vanilla
1 t      baking soda

 

Combine everything BUT baking soda and egg whites. When thoroughly mixed, add the soda and then fold in beaten egg whites.

Bake in greased and floured bunt pan at 325 for one hour or until done through..
