Oriental Salmon

A few weeks ago I received two cook books from CostCo. As I was reading recipes to Kay from Cooking the CostCo Way she said "Ouoooo, that sounds goooood!" I’ve learned, over the past 31 years that when Kay says "Ouoooo" in that certain tone of voice, I’d better take notice. In this case it was directed at Oriental Griled Salmon on page 222.

1 T soy sauce

1 T rice wine vinegar

1 T toasted sesame oil

1 t ginger, finely minced

1 t garlic, finely minced

  1. scallion bulbs, crushed

4 Marine Harvest salmon portions (6 oz. each)

1. Whisk together soy sauce, vinegar, sesame oil, ginger, garlic and onions

and poor onto salmon. Marinate for 30-60 minutes in refrigerator.

  1. Grill for approximately 5 minutes on each side or until salmon flakes apart easily with a fork.

We’ve been having this ever week for a few weeks, now and I used just two portions of CostCo’s skinless salmon and I doubled the marinade. Then I placed the salmon and marinade in a vacuum dish to marinate for an hour or two, depending on other things I’m doing.

I’ve cooked it under the broiler, on the BBQ and with the new George Foreman Grill with the removable plates that are so easy to clean. In each instance it was a great meal.

We have this with our broccoli salad and it’s a GREAT meal.
