Ratatouille Dinner

1 lb. pork sausage4 C eggplant, peeled and cubed – about ½ inch pieces
1 C Monterey Jack Cheese, shredded
Cook sausage, onion and garlic until sausage is
crisp.* Drain all but 2 tablespoons of fat.
Stir in flour and then add
other ingredients except the cheese. Stir well, cover and simmer 10
minutes.
Stir in cheese and simmer for another 10 to 20 minutes, stirring
occasionally.
* Her recipe said "crisp".

Made grandma's recipe tonight and we were blown
away. Going to add it to the Favorites of the Favorites section.
I used brown rice flower and Jimmy Dean sausage and
1 and a half cups of cheese. Outstanding.
