Ratatouille Dinner

1 lb.     pork sausage
½ C     onion, thinly sliced and diced large
1           garlic clove, crushed

4 C        eggplant, peeled and cubed – about ½ inch pieces
3 ½ C   tomatoes – one 28 oz. can whole or diced
1 ½ C   zucchini, peeled and diced – about ½ inch pieces
1 C        green bell pepper, diced ½ inch
2 T       flour (we now use brown rice flour)
½ to ¾ t salt – to your taste
½ t        basil leaves
¼ t        pepper

1 C Monterey Jack Cheese, shredded


    Cook sausage, onion and garlic until sausage is crisp.* Drain all but 2 tablespoons of fat.
Stir in flour and then add other ingredients except the cheese. Stir well, cover and simmer 10 minutes.
Stir in cheese and simmer for another 10 to 20 minutes, stirring occasionally.

* Her recipe said "crisp".

   Made grandma's recipe tonight and we were blown away.  Going to add it to the Favorites of the Favorites section.
    I used brown rice flower and Jimmy Dean sausage and 1 and a half cups of cheese.  Outstanding.
