Chile Rice

Les Spears

1 cup rice

1/2 sm onion diced

2 Tblsp butter

1-7oz. can Ortega green chiles (rinsed, seeds removed, butterflied)

Jack cheese (sliced) (enough to stuff each chili)

2 cans beef consume'

1/2 consume' can of water

In a fry pan sauté onions and rice in the butter until rice is browned. Put rice mix into 9x13" baking dish. Stuff chiles with cheese and cut into ½ inch pieces. Place chiles w/cheese on top of rice. Pour beef consume' and water over all and bake @ 375 for 45 min. or until consume' is absorbed. Note: we usually double the recipe (just like Les said to).
