Salad, Fall Pear Spinach

6-8 slices bacon, fried crisp and crumbled

3 lg pears, red - about 1.5 lbs

3 T lemon juice

1 10 oz. pkg. Spinach (baby is good)

½ lb. Mushrooms, cleaned, rinsed and sliced

Dressing

½ c minced crystallized ginger

¼ c olive oil, extra virgin

¼ c red wine vinegar

½ t pepper

Core and thinly slice pears. Mix with lemon juice. Mix spinach and mushrooms. Place on plate and layer pears on top.

Pour dressing over salad and sprinkle with bacon.
