"Louie, Louie,
Hey baby,we gotta go"
Amounts of each vary depending on how I
feel
tomato, diced or quartered and those cut in half
Crab, Shrimp or Langostino or a combination
olives, sliced or halved
beets, pickled, sliced & quartered or slivered
asparagus, pickled, cut to 1/2 in. pieces
hard boiled egg, quartered(2)
cucumber, peeled, sliced (sometimes I leave the cucumber out)
iceberg & romaine lettuce
Louie Louie Dressing
1 C mayonnaise
1 T
parsley,
chopped
fresh
2 T sweet pickle relish
2 T ketchup
2 t
capers, well drained
½ t paprika
1 hard cooked egg, quartered
Blend well in a blender until the egg is
reduced and
the dressing
reaches the consistency desired.
We like ours where the egg is fine but
still
detectable.
I use a
small Ninja but any blender will do.
We use capers because we usually have them. If not, that's OK too.
Mix
dressing ingredients and toss to cover all the lettuce. Layer
other salad
ingredients
and drizzle additional dressing over those.
Place the quartered eggs around the
outside of the salad.
