MACARONI SALAD

Carl & Kay’s Recipe

 

Almost everyone has a macaroni salad recipe. This is ours.

Serves 12

1 Lb. Pkg. salad macaroni (makes about 5 cups after boiling)
1 ½ C celery, diced about the size of the macaroni
1 ½ C black olives, sliced
1 C     red onion, thinly sliced, finely diced
1  C    Burpless Cucumber (European? English?)

1  C     Cheaddar, sharp, diced
3/4  C   salami slivered
1 C     mayonnaise
1 3/4 C pickle relish
(add more later if you need to)
1/3 - 1/2 red bell pepper, diced
1 Tsp. salt
¼ Tsp. pepper

           
I dice everything, except the sliced olives, about the same size as the pasta.

1.  While water is getting ready to boil and while macaroni is boiling, slice and dice celery, olives, onion and bell  pepper
2.  Prepare the macaroni according to package instructions. Pour out into colander under cold water and rinse until
      cool.     Make sure macaroni is fully drained.
3.  Combine all ingredients. Chill for a few hours or overnight.
4.  I often substitute Kay's Season Salt for the salt and pepper

  When I made the salad, a few days ago, I added some rice vinegar and it gave it a nice additional flavor.  Also, I felt it needed a little more mayo and relish.  It's always  a little different each time I make it. But oh, so good.
