Apple Pie
 

    There's a saying, Easy as Apple Pie.  Must be talking about this one.  Even I can make it.
Kay's done this for years and  using a second prepared pie crust for the top makes it just that much easier.


8 cups      apple slices (about 8-10 tart apples peeled and cored) (if we use Gravensteins we add a little lemon juice
2 Tbs.      all-purpose flour
1/4 cup     brown sugar
2 tsp.        ground cinnamon
1/2 tsp.      ginger  (or to your taste)
2              9 inch prepared pie crusts ( one for the top)
2  Tbs.      butter, cut into small cubes

                        Preheat oven to 375º

    Place all ingredients, except the butter,  into a large bowl and toss well to evenly coat all the slices of apple.  Pile them into a prepared 9 inch pie crust.  Dot the top of the apple filling with the butter cubes.
Cover with second pie crust and pressing all around the edge with the tines of a fork, or something else for a nice design..  Cut 6 -8 holes in the top for steam to escape.

    Bake 50-60 minutes (cover the top with foil if it starts to get too brown) until filling is bubbling.

    Sounds good.
