Veggies From a Can
I’m pretty lazy and Kay can’t hold a cob of corn so canned corn, beans and spinach are items we use a lot.
Corn
I drain most of the liquid. Add about 4 T butter, a little s & p and let it simmer a while in a small sauce pan. I drain it or use a slotted spoon to serve.
Green Beans
I drain the beans and dump them in a small sauce pan. Add about 1/3 C balsamic vinegar and just before serving I add about 1/3 C of crumbled bacon.
(I fry up about 3 to 6 lbs. Of bacon at a time, freeze it and then always have some on hand.)
Spinach
Lots of people don’t like spinach but this is pretty good.
Drain the spinach and dump it in a small sauce pan. Add about 3T (4 or 5 is OK too) butter/margarine 1/3 C balsamic vinegar, a little s & p and grate about 1/3 t of fresh nutmeg into it (or ½ t dried nutmeg). Simmer to blend, drain and serve.
